Rick BaylessI am totally in love with this margarita because it celebrates what three very different agave spirits bring to a margarita. (I know: sotol has fairly recently been declassified from the agave family, but—for the purposes of this recipe—I’m ignoring that.) There’s the classic brightness of tequila, the rich flavor and gentle smoke from mezcal and the beautiful herbaceousness of sotol.
